- Bodies and Bites: a medical school program that teaches anatomy, physiology, and nutrition to elementary school kidsButterfield, Kimberly; Wesley, Mary; Carvalho, Helena; Holt Foerst, Emily; Toy, Serkan; Powell, Courtney; Trinkle, David; Rau, Kristofer (Frontiers, 2024-07-09)Undergraduate medical students who participate in community outreach programs gain a multitude of benefits that impact not only their professional development but also the well-being of the communities they serve. At the Virginia Tech Carilion School of Medicine (VTCSOM), students have the opportunity to volunteer in the “Bodies and Bites” program at the West End Center for Youth, an after-school educational center that serves K-12 children in Roanoke, Virginia. The purpose of Bodies and Bites is to teach elementary school children in 2nd to 5th grade how their bodies work and how to keep them healthy through good nutrition and exercise. All sessions are led by VTCSOM medical students and graduate students from our partnering academic institution, the Fralin Biomedical Research Institute (FBRI). Each week, the children and Health Professions students explore a different topic related to human anatomy and physiology using anatomical models, small group discussions, and hands-on activities. At the end of each session, the participants create a healthy snack related to the day’s topic. The overall goal of the present study was to assess the perception of the Bodies and Bites program from the view of our student volunteers, and the 4th and 5th graders who attend the West End Center. Now in its 6th year, Bodies and Bites continues to be popular as a voluntary program among our Health Professions students, and is well received by the West End Center and the elementary school children they serve. Our students and community mutually benefit from this program, with the former having an opportunity to briefly disengage from the rigors of their studies while gaining valuable skills in science communication and inspiring children to pursue fields in Science, Technology, Engineering, Math, and Medicine (STEMM), and the latter having fun while learning about their bodies and discovering ways to improve their health.

- Expanding Reach and Equitable Access to Diabetes Prevention and Control Programs Through Distance Learning and Innovations in Program MarketingRafie, Carlin; Margheim, Lynn; Butterfield, Kimberly; Pourkhalili, Azin (2021)Conference Area of Focus: Health Equity Objectives of the Presentation: 1. Outline the key components of an effective distance learning platform for behavior change programs. 2. Describe the application of these components to distance learning platforms developed for two diabetes lifestyle management programs conducted by Virginia Cooperative Extension. 3. Detail the impact of online program marketing strategies on program access and reach, and lessons learned from process and outcome data collected during five programs conducted using the distance learning platforms Diabetes is one of the most common chronic diseases in the United States, and is associated with well-documented adverse health outcomes. Recently, diabetes has emerged as a significant risk factor for severe coronavirus disease 2019 (COVID-19). People with COVID-19 and diabetes are more likely to be admitted to the ICU, require mechanical ventilation, and succumb to the disease. Virginia Cooperative Extension is meeting the need for diabetes prevention and control education through two evidence-based lifestyle-change programs, The Diabetes Prevention Program, and the Balanced Living with Diabetes Program. The social distancing restrictions implemented to control the spread of SARS-CoV-2, halted these in-person programs at a time when prevention and control of diabetes was even more important. It created the opportunity, however, for capacity building in distance learning programs that could remove barriers to program participation and expand program reach more equitably. A team of VCE Extension faculty mobilized to create online platforms and marketing materials, and provide training to allow Extension agents to conduct these programs through distance learning. We developed an all-in-one participant program platform for both programs that serves the needs of both the participants and Extension Educators. For the year-long VCE DPP we developed a robust platform using Canvas and Zoom. For the six- session BLD program we developed an easily accessible Google site platform linked with Zoom. We also created systems for program marketing through social media to target at risk population groups. Five programs (3 DPP and 2 BLD) were conducted in 2020, and 49 individuals with prediabetes or diabetes from five VCE service communities are improving their health through these programs. The objectives of this presentation are threefold, 1) Outline the key components of an effective distance learning platform, 2) Describe the application of these components to distance learning platforms developed for two diabetes programs, and 3) Detail the social media marketing strategies and their impact on reach to at risk populations
- Exploring the Impact of Increased Access and Experiential Learning on Fruit and Vegetable Consumption for Diabetes Prevention Program ParticipantsMunson, Amy Jaelyn; Rafie, Carlin; Serrano, Elena L.; Butterfield, Kimberly (Virginia Tech, 2023-05-08)The aim of this study was to address the need to improve ways of encouraging individuals who are living with prediabetes to increase their daily consumption of fruits and vegetables. In order to address this problem, the study explored a strategy that could serve as motivation and skill-building in people who are living with prediabetes. The first part of the strategy was to provide participants with weekly allotments of fresh fruits and vegetables. In addition to providing fresh fruits and vegetables, the second part of the strategy allowed participants to experience a food demonstration highlighting a healthy recipe using one or two of the fresh fruits and vegetables. The strategy was implemented along with a weekly curriculum from a “lifestyle change program” led by a trained coach (CDC, 2021e). To evaluate the impact of the strategy, dietary consumption surveys were collected from individuals enrolled in the CDC-recognized lifestyle change program in two different cohorts (a control group and intervention group) located in Southwest Virginia over an eighteen-week period. Both groups responded to a survey regarding their fruit and vegetable consumption and the data was analyzed for the relationship between fruit and vegetable access and skill-building food demonstrations and consumption of fruit and vegetables. The results could assist diabetes instructors and coaches in developing program components to implement with their clients who are living with prediabetes to encourage behavior changes around meeting the recommended daily consumption of fruits and vegetables.
