Abstract
The Covid-19 pandemic could mean that the restaurant kitchen might never be the same. Kitchen and restaurant operators have found new ways to stay flexible in the back of the house working as ghost kitchens for other brands' menus. Euromonitor, a market research company, estimates that the ghost-kitchen industry could be worth more than $1 trillion in revenue by 2030.
